Summer is everyone’s favorite time to entertain! Here at Ampersand we have a few recipes that will brighten any outdoor get together this summer. Just as important as what you serve to eat is what you serve your meal in! Read on for delectable light recipes and beautiful serving pieces sure to make your summer entertaining original and delightful!
Recipes:
Edamame Salsa:
1 bag frozen shelled edamame, defrosted
1 pint cherry tomatoes, sliced in half
1 can white shoepeg corn
Sliced cilantro to taste
1/2 cup chopped green onions
1-2 fresh squeezed lime
1 teaspoon olive oil
Sea salt and fresh ground pepper to taste
Combine all ingredients, serve with tortilla chips, and enjoy!
Serve with:
Orzo Salad
1 pound orzo pasta, cooked
1 bunch green onions, thinly sliced
1 cup kalamata olives, pitted and halved
1-1 1/2 cup feta cheese, crumbled
¼ toasted pine nuts
Dressing:
½ cup canola oil
½ cup fresh squeezed lemon juice
4 cloves crushed garlic
1-2 tablespoons dill weed
Sea salt and fresh ground pepper to taste
Combine all ingredients of the dressing while pasta cooks, combine cooked pasta and dressing, lastly mix in green onions, olives, cheese, and pine nuts! 15 minute prep time!

Arlene’s Peach White Sangria
1 25 ounce bottle Pinot Grigio
5 ounces Triple Sec
5 ounce Peach Schnapps
1 ounce Peach or Apricot Nectar
2 Apples
2 Pears
Cube apples and pears and add all other above ingredients to large pitcher over ice. Top with Sprite and Enjoy!
